Mushroom Gravy

Hi Everyone,

Here is my recipe on how to prepare "Mushroom Gravy" in an easy way. Please see the video in youtube.

Ingredients

1) Onion - 1
2) Tomato - 2 (medium)
3) Mushroom - 1 cup
4) Potato - 1 (large)
5) Coriander, Curry leaves (For garnishing)


For Masala

Coconut - 1/2 cup
Onion - 1/2
Black Pepper - 1 Tbsp
Fennel seeds - 1 Tbsp
Ginger & Garlic - To taste

Dum Briyani

Hi Everyone,

Here is my recipe on how to prepare "Dum Briyani" in a traditional South Indian style. Please see the video in youtube.

Ingredients

1) Onion - 1
2) Tomato - 2 (medium)
3) Coconut milk - 1 cup
4) Seasonal vegetables - 2 cups (Carrot, Beans, Mushroom, Peas, Cauliflower, Potato,etc)
5) Mint leaves, Coriander, Curry leaves (For garnishing)


For Masala

Red Chillies - 5
Dhaniya - 2 Tbsp
Black Pepper - 1 Tbsp
Jeera - 1 Tbsp
Fennel seeds - 1 Tbsp
Ginger & Garlic - To taste

How to prepare

1) Grind above to a smooth paste and set aside.
2) Soak Basmati rice for 30 mins (1:2 ratio)
3) Cook the rice till it is half done. Add cinnamon, jeera and cardamom to the rice while cooking.
4) After the rice is done, then drain the water and keep it aside.
5) In a tawa, pour litte vegetable oil and put jeera.
6) Add onion and saute it till golden brown. To cook onion quickly, add a pinch of salt
7) Add tomato and saute it for 2-3 mins.
8) When Onion and Tomato are well cooked, add the masala paste and let it cook for 2 - 3 mins. If needed, you can add 1 tbsp of sambhar powder for taste.
9) Now, add the coconut milk and stir it for a minute.
10) You can now add the vegetables and water drained from cooked rice
11) Wait till vegetables are cooked. Then, take 2/3 of this mixture into a separate container.
12) Now, you have to layer the rice on the cooker, pour the vegetable mixture. Then, add a layer of rice and pour the mixture. Repeat this step.
13) Close the rice cooker and set it at lowest temperature. Keep it for 20 - 30 mins. This process will make the rice get the masala aroma.
